  • 2 hg salami

  • 300 g smoked scamorza cheese

  • Two zucchini

  • A sprig of fresh parsley

  • Extra virgin olive oil

  • Salt and pepper

  • Pitted green olives

  • Pitted black olives

  • Yellow and red tomatoes

Preparation

  1. Preparation:
    Wash the zucchini and cut them into rounds. Wash the yellow and red cherry tomatoes, leaving them whole. Cut the smoked scamorza cheese into cubes. Slice the salami into thin rounds.

  2. Preparing skewers:
    Thread on wooden skewers alternating zucchini, cherry tomatoes, cubes of scamorza cheese, green and black olives, and slices of salami. Continue filling each skewer until a balanced composition is achieved.

  3. Seasoning:
    Mix extra virgin olive oil, salt, pepper and chopped parsley in a bowl. Brush skewers with the dressing.

  1. Cooking:
    Grill the skewers on a hot griddle for 3-4 minutes per side, until the vegetables are golden brown and the scamorza cheese begins to melt.

     

  2. Service:
    Serve the skewers hot.
